Ingredients

plumsmumMany people know that a tomato is a fruit, but did you know that rhubarb is a vegetable? Our jams, jellies, preserves, chutneys and relishes contain fruits and vegetables gathered at their best. To this we add the following: 

Jams, jellies, relishes and preserves

  • granulated sugar
  • apple pectin, where necessary
  • citric acid, where necessary

Chutneys

  • golden caster, soft brown, demerera or muscovado sugar
  • red or white wine, cider or malt vinegar
  • herbs and spices
  • sea salt

All of The Butch Institute’s fruit based products are designated ‘extra’, made with at least 50g of fruit per 100g of raw ingredients. All our current products are suitable for both vegetarians and vegans. If this changes in the future (the addition of honey to a marmalade, for instance) it will be made very clear on the label.

Best before

Sugar is an excellent preservative; we don’t add anything, except a smidge of citric acid where necessary, and that’s to aid the set. Direct sunlight will cause jams, jellies and marmalades to oxidise and turns ruby reds and burnished oranges to dull browns, ruining the flavour. If you keep your jars in a cool, dark, dry place unopened and upright they will keep much better.

Our ‘best before end’ guideline (based on the individual month of manufacture on each jar) is a year for jams, jellies, preserves and relishes, eighteen months for chutneys and two years for marmalades. Once broached, an opened jar should be refrigerated and consumed within three months – but it won’t last that long.

What’s in the jar?

All our products tell you on the label what’s in them and taste of what they’re made of. We like to talk to people when they buy our products about where we get fruit from and take pictures when we pick and prepare it. We’re always looking for new local fruity and foody collaborators. Here’s the fine print for those that want more information.

All Butch Institute products contain no animal ingredients. They are, however, produced in a kitchen where dairy, eggs and honey are handled (separately to our preparation methods) but if you are a very strict vegan we thought you would want to know this. The kitchen is meat and fish free permanently.

Currently, one of our products contains nuts. This is clearly stated on the label.

Currently, several of our products contain alcohol. Again, this is clear from the labelling.

Emma takes allergens very seriously as she carries an epipen herself due to a serious allergy (to strawberries, hence no strawberry jam!). Please do drop us a line via the contact page if you would like any further information regarding ingredients or potential allergens.

mulled blueberry: blueberries, sugar, orange juice and zest, lemon juice, root ginger, mulling spices (allspice, cinnamon, clove, nutmeg), cinnamon stick, black pepper, apple pectin

peach with vanilla: peaches, sugar, vanilla bean, apple pectin, citric acid

blackcurrant with bay leaf: blackcurrants, sugar, bay leaf, citric acid

cherry bakewell with amaretto syrup and almonds: cherries, sugar, amaretto flavoured syrup, flaked almonds, apple pectin, citric acid
